Zucchini Protein Oats

These are my FAVOURITE breakfast in the warmer months.

Don’t be deterred by the added zucchini, trust me! You CANNOT taste it! Not only does this help you add some extra veggies to your day but it also adds SO much volume to your oats. So if you are someone who loves eating big portions, you must give these a try!

Ingredients

  • 1/3 cup oats

  • 1/2 zucchini, grated

  • 1/2 small ripe banana, mashed (optional, but is a nice way to naturally sweeten the oats!)

  • 1/2-3/4 cup milk or water (I used almond milk)

  • 1 scoop Happy Way protein powder - love using vegan vanilla or triple choc fudge for these oats

  • Optional add ins: cinnamon, vanilla, maca, cacao etc.

  • Toppings: fresh or frozen berries, nut butter, coconut yoghurt, granola etc.

Method

  1. Add the oats. zucchini and mashed banana to a saucepan. Top with milk or water (enough to just cover) and bring to the boil over medium heat. Stir constantly so they don't stick to the pan.

  2. Once boiling, turn down the heat to a simmer and cook until liquid is absorbed and oats have thickened to your liking. Stir occasionally so they don't stick.

  3. Remove from heat and add in protein powder and any optional add ins.

  4. Transfer into your serving bowl and top with your choice of toppings and enjoy!
