Banana Raspberry Jam Crumble Bars
A deliciously sweet raspberry crumble x banana oats bars - honestly, does it get any better?!
These have a soft oat base, topped with a thick layer of raspberry jam and then crunchy golden crumble on top. They are just an absolute dreeeam.
They are PERFECT for meal prep and last the entire week in the fridge (but lets face it, they ain't lasting that long). I love them for a mid-morning snack served warm with a scoop of coconut yoghurt! YUMM

Ingredients (makes 8 bars)
2 cup rolled oats
1/2 cup almond meal
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
2 ripe bananas, mashed
1 tsp vanilla extract
4 tbsp vegan butter, melted
1 chia egg
3 heaped tbsp raspberry jam
Method
Preheat the oven to 180C, fan-forced and line a baking pan with baking paper.
In a large bowl, add the oats, almond meal, cinnamon, baking powder and salt, and combine. The stir in the mashed banana, vanilla, melted butter and egg. The mixture should be wet and crumbly, but hold together when pressed.
Press two-thirds of the oat mixture in an even layer on the bottom of the prepared baking pan and top with an even layer of raspberry jam.
Sprinkle the jam with the remaining oat mixture and lightly press down.
Bake bars for 35 to 40 minutes, until golden and cooked through.
Let cool completely before cutting into 8 squares.
