Vegan Fruit & Nut Chocolate (low sugar)
I love stocking the freezer with a little healthy treat for the week. This week, it's this divine Vegan Fruit & Nut Chocolate!
I made the chocolate for this from scratch and this has to be my favourite homemade chocolate recipe to date!
Its the perfect wholesome treat. Made of all natural ingredients, dairy free & vegan, and is even low sugar with just a small amount of rice malt syrup. The addition of peanut butter makes it sweet without needing much sweetener!

Vegan Fruit & Nut Chocolate
Serves: 6-12 pieces
Ingredients
3 tbsp cacao powder
2 tbsp coconut oil
2 tbsp coconut cream (thick part of refrigerated coconut milk)
3 tbsp peanut butter (or almond butter)
1 tbsp rice malt syrup (or maple)
2 tbsp coconut flakes
1/3 cup mixed nuts, chopped (I used activated almonds, macadamias and walnuts)
1 tbsp dried fruit (cranberries or raisins)
Method
Melt the coconut oil and coconut cream gently in the microwave until liquid. Stir in the nut butter and rice malt syrup. Then whisk in the cacao until smooth and silky.
Fold in the coconut flakes, nuts and dried fruit.
Pour chocolate mixture into a lined tray and spread out evenly.
Place in the freezer for 2 hours to set before cutting.
Store in the freezer for a hard set chocolate or in the fridge for more of a fudge consistency.
