Easy Tuna Cakes
The easy peasy tuna cakes recipe that I’ve been loving for lunches this week!

Easy Tuna Cakes
Serves: 3
Ingredients
425g can tuna
1/3 cup almond meal
1 tbsp dijion mustard
1/4 cup fresh parsley, chopped
1 egg or vegan egg
Salt and pepper, to taste
1/4 cup shallots, chopped (only use green part if Low FODMAP)
2 tbsp olive oil or garlic infused olive oil, for cooking
Method
Drain the tuna and place it into a mixing bowl with other remaining ingredients. Mix everything until combined.
Share mixture into 8-10 patties.
Heat 1/2 the olive oil or garlic infused olive oil in a fry pan on medium-high heat. Add in half the patties and cook for 4-5 mins, until golden, and then flip and cook for another 4-5 mins.
Repeat with remaining mixture.
Serve immediately or refrigerate and enjoy later (hot or cold).
