Easy Tuna Cakes

The easy peasy tuna cakes recipe that I’ve been loving for lunches this week!

Easy Tuna Cakes

Serves: 3

Ingredients

  • 425g can tuna

  • 1/3 cup almond meal

  • 1 tbsp dijion mustard

  • 1/4 cup fresh parsley, chopped

  • 1 egg or vegan egg

  • Salt and pepper, to taste

  • 1/4 cup shallots, chopped (only use green part if Low FODMAP)

  • 2 tbsp olive oil or garlic infused olive oil, for cooking

Method

  1. Drain the tuna and place it into a mixing bowl with other remaining ingredients. Mix everything until combined.

  2. Share mixture into 8-10 patties.

  3. Heat 1/2 the olive oil or garlic infused olive oil in a fry pan on medium-high heat. Add in half the patties and cook for 4-5 mins, until golden, and then flip and cook for another 4-5 mins.

  4. Repeat with remaining mixture.

  5. Serve immediately or refrigerate and enjoy later (hot or cold).
