Lemon Blueberry Breakfast Pudding

Lemon Blueberry is a match made in heaven! And this breakfast pudding is exactly that! A delicious oozzy centre, its like eating dessert for breakfast!!

Lemon Blueberry Breakfast Pudding

Serves 1

Ingredients

  • 1/3 cup teff flakes (or rolled oats/oat flour)

  • 1 scoop (30g) vegan vanilla protein

  • 1/2 tsp baking powder

  • 1/2 tbsp pure maple syrup

  • 1/2 tsp vanilla extract

  • 1 heaped tbsp coconut yoghurt

  • Juice of 1 small lemon or 1/2 large lemon

  • 1/4-1/3 cup coconut milk (as much as needed to make a thick cake like batter)

  • 1/4 cup blueberries

Centre

  • 1-2 tsp coconut yoghurt

  • 1 piece of white chocolate, optional

Method

  1. Add all ingredients, except those for the centre, to a bowl and combine. Gently stir in blueberries.

  2. Transfer mixture to a greased ramekin, reserving 2 tbsp.

  3. Spoon in the additional coconut yoghurt to the centre and press in the chocolate piece, if using. Cover with remaining mixture.

  4. Bake in the airfryer at 180 for 13-14 minutes, or until golden.
