Peanut Butter Cereal Bars

Anyone else obsessed with cereal? Cos same.

So I went and made a delicious, nutritious and balanced snack from it and it’s one of my favourite snacks to date!!

Peanut Butter Cereal Bars

Serves: 12 bars

Ingredients

  • 2 cups Kellogg’s Gluten Free Special K Cereal

  • 4 heaped tbsp natural runny peanut butter

  • 1/3 cup rice malt syrup (or honey)

  • 1 serve vegan vanilla protein (I use @happywayau)

  • 1/2 tsp ground cinnamon

  • Pinch of salt

  • 1 tsp vanilla extract

  • 1/4 cup desiccated coconut

  • 1/4 cup pepitas

  • 1/4 cup dried fruit (raisins/cranberries)

  • 1/4 cup dairy free dark choc choc chips

Method

  1. Preheat your oven to 180 degrees, fan-forced.

  2. Combine the peanut butter, rice malt syrup, protein powder, salt and vanilla in a bowl.

  3. In a separate bowl, combine the remaining dry ingredients. Pour over the peanut butter mixture and stir through. It may be easier to use damp hands to combine everything so it’s coated evenly.

  4. Line a small baking pan with baking paper and pour mixture in. Press down FIRMLY with your hands or the bottom of a cup.

  5. Place in the oven to bake 14-15 minutes, until golden.

  6. Remove from the oven and allow to cool in the pan. Place in the fridge for minimum 2 hours before cutting.
