Thai Peanut Salad Dressing

I have created my new favourite salad dressing that actually makes me excited to eat salad for lunch everyday!

I'm really focusing on packing as much nutrients and vegetables into every meal as I try to get on top of the inflammation in my body, so salads have become a daily staple. And what truly makes or breaks a salad, is the salad dressing!

Store bought dressings are loaded with sugars, high amounts of salt and highly processed, inflammatory oils. So I ALWAYS prefer to make my own. It takes next to no time and tastes 100x better.

Thai Peanut Salad Dressing

Ingredients

Serves 2

  • 3 tbsp coconut aminos (can sub for GF soy sauce)

  • 2 tbsp natural smooth peanut butter

  • 1/2 tsp ground ginger

  • 1 tbsp garlic infused olive oil (or 1 tbsp EVOO + 1 minced garlic clove)

  • 1 tbsp fresh lime juice

  • Chilli flakes, just a sprinkle

  • Salt & pepper, to taste

  • Warm filtered water

Method

  1. Add all the ingredients, except water, to a jar. Place the lid on and shake well until everything is combined.

  2. Add a dash of water to thin the dressing to your desired consistency - adding as much or as little water as desired.

  3. Drizzle over your salad and enjoy!!

Store in the fridge for up to 4 days.
