Saucy Chocolate Peanut Butter Pudding + Food Guilt Chats

I'm here to tell you that you most definitely DO NOT have to experience guilt after eating!

Often food guilt arises because we label foods as 'good' and 'bad', so every time we make a 'bad' choice - and lets face it, we're only human so perfection is not possible - we feel guilty and beat ourselves up.

So how do we overcome food guilt? We give up this 'all or nothing' mentality and stop labelling foods! Because ALL foods (yes even cake and ice-cream), can be apart of a healthy balanced diet!!

And along with this, let go of the need for perfection. Guilt and self-hatred are not going to get you to where you want to be. Be kind to yourself. And practice forgiveness if things don't go 100% to plan. Know that its okay to pivot and change course along the journey.

Okay now onto this epic, winter warmer recipe which you definitely should never feel guilty for enjoying.

Gooey and saucy on top, and fudgy and cakey on the bottom, just incredible..

SAUCY CHOC PB PUDDING

Serves 2

Ingredients

  • 1/2 cup almond meal

  • 1/4 cup cacao powder

  • 1 tsp baking powder

  • 2 tbsp powdered stevia or coconut sugar

  • 1 egg or flax egg

  • 2 tbsp coconut oil, melted

  • 1/3 cup coconut milk (canned)

  • 2 heaped tbsp peanut butter

  • 1 tsp vanilla extract

Sauce

  • 2 tbsp powder stevia or coconut sugar

  • 2 tbsp cacao powder

  • 3/4 cup boiling water

Method

  1. Preheat your oven to 180 degrees, fan-forced.

  2. In a mixing bowl, combine all the dry pudding ingredients. Then mix through the wet ingredients.

  3. Grease two small ramekins or one larger one.

  4. Pour in the mixture and smooth over.

  5. Combine the cacao and sugar for the sauce and sprinkle over the pudding mixture. Then pour over boiled water.

  6. Place in the oven to bake for 22-25 mins for small ramekins, or 30-35 minutes for the larger pan.
