Loaded Veggie Frittata

I've got a new recipe for you to try! This simple Veggie Loaded Frittata will have you set for breakfast, lunch or dinners!

Loaded Veggie Frittata

Ingredients

Serves 3-4

  • 4 eggs

  • 1 cup egg whites (or 4 more eggs)

  • 1/4 cup almond milk

  • 2 tsp Dijon mustard

  • 1/2 tsp @spicetub Roast Chickpea Mix (could sub for paprika)

  • Sprinkle of chilli flakes

  • 2 tbsp nutritional yeast

  • Pepper, to taste

  • 1 cup pumpkin, cubed

  • 1/2 small red capsicum, diced

  • 1/2 zucchini, chopped

  • 1 large tomato, chopped

  • 1/2 cup carrot, shredded

  • 2 mushrooms, chopped

  • Handful of baby spinach

  • 1 tbsp garlic infused olive oil (or EVOO + minced garlic)

Method

  1. Heat a fry pan over medium-high heat with olive oil. Add in the pumpkin, cover and cook until softened slightly. Then add remaining veggies and cook to your liking.

  2. Meanwhile, whisk the remaining ingredients together in a large bowl.

  3. Once the veggies are done, add them to the egg mixture and mix through.

  4. Transfer mixture into a greased baking pan.

  5. Place in the oven to cook at 180 degrees for 45-50 minutes or until golden and cooked through.
