Sticky Date Porridge with Coconut Caramel Sauce

Sticky Date Pudding has to be one of my all time favourite desserts, so I've gone and made it into a delicious and healthy breakfast dish to start your day with! This is going to be the perfect, warming breakfast as we head into the cooler months.

FOR THE PORRIDGE (serves 2)

  • 1 cup oats

  • 2 cup almond or coconut milk

  • 2 tbsp chia seeds

  • 6 dates, chopped

  • 1 tsp cinnamon

  • 1 tbsp almond butter

  • 1 tsp vanilla extract

Method

  1. Combine all ingredients in a saucepan over medium heat and bring to the boil.

  2. Then reduce heat and allow to simmer until thickened to your liking. Be sure to stir occasionally so the porridge doesn't stick to the pan.

FOR THE COCONUT CARAMEL SAUCE

  • 1/2 cup full-fat canned coconut milk

  • 1 tbsp coconut sugar

  • 1 tsp vanilla

  • Pinch of salt

Method

  1. Combine all ingredients in a saucepan over medium heat. Bring to the boil and reduce heat to simmer until thickened. .

  2. Serve the porridge warm, with a drizzle of coconut-caramel sauce and some coconut flakes.
