Prawn Summer Salad

I've posted about how amazing this salad is THAT many times on my insta, so I thought it was time I actually shared the recipe! This recipe is so delicious, yet so so quick and easy, which is why it is one of my go-to recipes. And if you are someone who isn't a fan of salad, I think this might just convert you!

The hero of this salad is definitely the prawns and delicious dressing! Today I also added some of the new Gevity Sriracha Mayo - I thought this salad couldn't get any better but dayumm this took it to a whole new level!

Give it a try and see for yourself! Its bound to be a new favourite and perfect for taking along to all those summer BBQs (just double or triple the recipe to make enough to share).

Prawn Summer Salad

Serves 1

Salad:

  • 2-3 cups salad of choice

  • 10 prawns (cooked, I cook mine in olive oil & @spicetub Roast Chickpea Mix)

Dressing:

  • 1 tbsp olive oil

  • 1 tsp honey

  • 1 tsp dijion mustard

  • 1/2 tsp dried oregano

  • Pinch of chilli flakes

Method

  1. To make the dressing, simply mix all the dressing ingredients together and set aside.

  2. Toss all your salad ingredients together. Top with cooked prawns and salad dressing.

  3. The finish with a few dollops of Gevity RX Sriracha mayo!

  4. Enjoy!

Storage: if you want to make this for meal prep of ahead of time, simply make the salad and store the dressing separately. Then dress just before serving.
