Plant-Based Nachos

Before adopting a more plant-based diet, I use to absolutely LOVE a huge plate of loaded mince nachos. But thanks to Flexible Foods that doesn't have to be a thing of the past! 🥳 Here is a super quick, nutritious and easy Plant-Based Nachos recipe for you that can be made and enjoyed any day of the week!

The Flexible Foods minces are a nutritious plant-based meat-free substitute. And unlike many other alternatives on the market, it is free from gluten, dairy, soy, nuts, artificial flavours, refined sugars or nasty fillers! Made from fermented pea protein, they are super high in protein. The 'original' mince I've used in this recipe has a massive 27g of protein per serve!

Ingredients (serves 3)

  • 1 packet Original Flexible Foods plant-based mince

  • 1 can crushed tomatoes

  • 1 zucchini, grated

  • 1 carrot, grated

  • 4 mushrooms, finely chopped

  • Herbs/spices: 1 tsp oregano, 1 tsp paprika, 1/2 tsp cumin, 1/4 tsp ground chilli

  • Salt and pepper, to taste

  • 8 small white potatoes, thinly sliced (or regular corn chips)

  • To serve: avocado, coconut yoghurt or vegan sour cream, fresh lime, greens

Method

  1. Place your potato slices in the airfryer, spray with a little olive oil and fry at 200 degrees for 20-30 minutes, or until crispy.

  2. Meanwhile, pour the Flexible Foods packet into as non-stick pan with 400ml of water and simmer covered over low heat for 4 minutes. Uncover and add in crushed tomatoes, zucchini, carrot, mushrooms, herbs/spices and salt and pepper.

  3. Simmer for 5-10 minutes.

  4. Now time to assemble! Start with your potato nachos, plant-based mince, and garnish with your greens, avocado, coconut yoghurt and fresh lime.

  5. Enjoy!
