Almond Caramel Fondant

Healthy enough for breakfast, indulgent enough for dessert. The choice is up to you.

Ingredients (serves 1)

Fondant:

  • 1 tbsp Better Being Steph x Sneaky Wholefoods salted caramel banana blend

  • 1 serve Happy Way vegan vanilla protein (discount: HAPPYELISE)

  • 2 tbsp Teff Tribe teff flour

  • 1/2 tsp baking powder

  • Pinch of salt

  • 1 heaped tbsp coconut yoghurt

  • 1/2 tsp vanilla extract

  • 1/2 tbsp pure maple syrup

  • 2-3 tbsp almond milk

Filling:

  • 1 tbsp almond butter

  • 1/2 tbsp maple syrup

  • Pinch of salt

Method

  1. Combine all fondant ingredients, adding as much almond milk as needed to make a thick cake consistency.

  2. Grease a small ramekin with coconut oil and add in 2/3 of the fondant mixture.

  3. Then mix together the filling ingredients and spoon into the centre of the fondant. Then cover over with remaining fondant mixture.

  4. Bake for 10-12 minutes at 180 degrees in the airfryer.

  5. Serve and enjoy! I served mine for brekkie with a side of strawberries
