Pineapple Lump Slice

Has anyone else tried Pineapple Lumps?! I discovered these on Contiki in New Zealand a couple years back, before going dairy free, and they were honestly such an obsession!!

I recently tried these Baked Pineapple pieces from Nibblish and they instantly reminded me of Pineapple Lumps, so I knew I had to use them to create a healthier, wholefood and dairy free version so I could enjoy them again! And I think this recipe could be even better than the original

Pineapple Lump Slice

Ingredients

  • 140g dark dairy free chocolate, melted

  • 1/2 packet Nibblish Baked Pineapple

  • 2 tbsp shredded coconut

Method

  1. Simply combine all the ingredients in a bowl. Pour into a silicone or lined tray and place in the fridge for 3 hours, minimum, to set before cutting.
