Fluffy Vegan Blueberry Pancakes
I'm all about thick and fluffy pancakes, and these here are the fluffiest pancakes you will ever make!
Fluffy Vegan Blueberry Pancakes
Ingredients
1/4 cup almond milk
1/2 tsp apple cider vinegar
1/2 cup rolled oats
1/2 ripe banana
1 tbsp pure maple syrup or rice malt syrup
1 tsp baking powder
Pinch of salt
1/2 tsp vanilla extract
1/2 punnet of blueberries
Method
In a small bowl or liquid measuring cup, combine the almond milk and apple cider vinegar and let stand for 3 minutes.
Add the oats, almond milk mixture, banana, maple syrup, baking powder, salt, and vanilla to a blender and blend until smooth.
Let the batter stand for 5 minutes to thicken up.
While the batter thickens, heat up a non-stick fry pan over medium heat. Once the pan is hot, spray with a little coconut oil.
Perfect pancake tip: use egg rings to cook the pancakes in - this ensures you get a perfect pancake everything and can add a little extra batter to make them super thick and fluffy! if you don't have them, they work perfectly fine without them too.
Add the egg rings to the pan, lightly spray and spoon in the pancake mixture dividing evenly amongst the 3 moulds. Press in a couple blueberries to each pancake. Allow to cook on medium-low heat for 2-3 minutes or until edges start to turn golden.
Flip and allow to cook for another 2 minutes on the other side and then serve!
