Overnight Banana Caramel French Toast Bake

I'm a huge fan of any breakfast that can be prepped ahead of time to make my life in the morning easier! And this bake does just that! Prep it the night before and in the morning, pop it in your airfryer (or oven) for 12 minutes, and go shower or do your air and make up while it cooks! Who says gourmet breakfasts have to be time consuming?!

Ingredients (serves 1)

  • 2 slices bread of choice* (I used my homemade Gluten Free Sourdough)

  • 1 egg

  • 1/4 cup + 1 tbsp almond milk

  • 1/2 tsp vanilla extract

  • Sprinkle of cinnamon

  • 15g vegan vanilla protein powder

  • 1 tbsp @betterbeingsteph x @sneaky_wholefoods banana caramel blend

  • 1/2 banana, sliced

Method

  1. Whisk together the egg, milk, vanilla, cinnamon and protein powder. Then stir through the banana caramel blend.

  2. Break the bread into pieces and drop it into the liquid mixture, coating every piece evenly.

  3. Spoon into a greased ramekin, adding in banana slices as you go. Pour over any remaining liquid. Finish with some extra banana caramel blend.

  4. Cover and place in the fridge overnight.

  5. In the morning, preheat you airfryer (or oven) to 180C and bake for 12 minutes (or 20 mins in oven).

  6. Serve fresh with a drizzle of maple syrup.
