Chunky Banana Caramel Hemp Granola

Sprinkle this on oats, smoothie bowls and yoghurt, or simply eat it straight from the jar!

Ingredients

  • 1.5 cups rolled oats

  • 1/2 cup chopped nuts (I used cashews and almonds)

  • 2 tbsp buckinis

  • 2 tbsp Hemp Seeds

  • 1 tsp ground cinnamon

  • Pinch of salt

  • 1/3 cup raisins

  • 2 mashed bananas

  • 2 tbsp Hemp Oil (or coconut oil)

  • 2 tbsp pure maple syrup

  • 1 tsp vanilla extract

Method

  1. Preheat your oven to 160C fan-forced.

  2. In a large mixing bowl, combine all the dry ingredients. And in a separate bowl, mash the bananas and add in the remaining wet ingredients.

  3. Pour the wet into the dry ingredients and stir to coat evenly.

  4. Pour onto a lined baking tray and press down firmly, so that there are no gaps or holes (about 1/2cm thick).

  5. Then place in the oven to bake for 40-45 minutes (rotating tray half way through cooking). If the granola is not crisp at the end of cooking, give another 5-10 mins in the oven.

  6. Allow to cool completely before breaking into chunks and store in an airtight container for up to 1 week.
