Chunky Banana Caramel Hemp Granola
Sprinkle this on oats, smoothie bowls and yoghurt, or simply eat it straight from the jar!
Ingredients
1.5 cups rolled oats
1/2 cup chopped nuts (I used cashews and almonds)
2 tbsp buckinis
2 tbsp Hemp Seeds
1 tsp ground cinnamon
Pinch of salt
1/3 cup raisins
2 mashed bananas
2 tbsp Hemp Oil (or coconut oil)
2 tbsp pure maple syrup
1 tsp vanilla extract
Method
Preheat your oven to 160C fan-forced.
In a large mixing bowl, combine all the dry ingredients. And in a separate bowl, mash the bananas and add in the remaining wet ingredients.
Pour the wet into the dry ingredients and stir to coat evenly.
Pour onto a lined baking tray and press down firmly, so that there are no gaps or holes (about 1/2cm thick).
Then place in the oven to bake for 40-45 minutes (rotating tray half way through cooking). If the granola is not crisp at the end of cooking, give another 5-10 mins in the oven.
Allow to cool completely before breaking into chunks and store in an airtight container for up to 1 week.
