Airfried Honey Mustard Salmon
A super tasty, easy and affordable week night dinner, whipped up in just 10 minutes!
Ingredients (serves 2)
Marinade:
1 tbsp honey (I used Manuka Honey)
1 tbsp seeded mustard
1 tbsp dijion mustard
1/2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tbsp sliced spring onion (optional)
Salt and pepper, to taste
Salmon:
2 salmon fillets (skin off)
Method
Mix together all the marinade ingredients in a small bowl.
Place the salmon fillets on a piece of baking paper and spoon the marinade on top, reserving 1-2 tbsp for later.
Place salmon (on baking paper) in the pre-heated airfryer and cook for 7 minutes.
After 7 minutes, glaze again with remaining marinade and cook for another 2 minutes or until cooked to your liking (cooking time may vary depending on the size of your fillets).
Serve with salad or vegetables of choice. I served mine with sautéed broccolini (sautéed for 4 mins over high heat in a non-stick pan) and some pre-roasted pumpkin.
