Apple & Rhubarb Crumble

Before making this recipe today, I'd never eaten or cooked with Rhubarb! Anyone else in the same boat?!

If so, this is the perfect recipe to try it! Because lets be real, who doesn't love a good Crumble? It tastes naughty enough to have for dessert but also healthy enough to enjoy for brekkie!

Ingredients

For the Filling:

  • 3 green apples, peeled and chopped

  • 1 bunch of rhubarb (leaves removed!)

  • 1 lemon, juiced

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

For the Crumble:

  • 1 cup rolled oats (use GF if needed)

  • 1 cup plain gluten free flour

  • 1/2 cup macadamias, chopped

  • 1 tsp ground cinnamon

  • 3 tbsp cold butter/nutellex

  • 3 tbsp pure maple syrup

Method

  1. Preheat the oven to 180°C.

  2. Chop the rhubarb into 2cm pieces and place in a saucepan with the chopped apples, maple syrup, cinnamon, vanilla and lemon juice. Cook gently over low-medium heat until the rhubarb softens, for around 10-15 minutes.

  3. Meanwhile, mix the ingredients for the crumble together rubbing them together with your fingertips until a crumble mixture forms.

  4. Once the rhubarb mixture is ready transfer to a baking dish and top with the crumble mixture.

  5. Cook for 20-25 minutes or until golden brown on top.

  6. Serve with coconut yoghurt and ice cream
