Crunchie Slice

When I was at the grocery store earlier this week, I came across Gluten Free Corn Flakes which instantly reminded me of a recipe Mum use to make for me and my siblings when we were younger. And it is that memory that inspired this recipe, which is my (gluten and dairy free) spin on Mum's Crunchie Slice!

I hope you love this recipe, it honestly takes me back to my childhood

INGREDIENTS

  • 1 cup Has No Gluten Free Self-Raising Flour

  • 1 cup Desiccated Coconut

  • 1 cup Has No Gluten Free Corn Flakes, lightly crushed

  • 1/2 cup Just Organic Raw Sugar (or sub coconut sugar)

  • 1/2 cup + 1 tbsp Nutelex, melted (or sub any butter/vegan butter)

  • 2 tbsp Almond Milk

  • 1 block Just Organic Dark Chocolate, melted

METHOD

  1. Preheat the oven to 170C fan-forced.

  2. Add the flour, coconut, crushed corn flakes and sugar to a bowl and combine.

  3. Then add in the melted nutelex and almond milk and mix through until everything is combined. The batter will be slightly crumbly, but when pressed together it should hold.

  4. Press batter into a lined square pan. Push down firmly with your fingers or the back of a spoon.

  5. Place in the oven to bake for 22-25 minutes or until slightly golden.

  6. Allow to cool before icing with melted chocolate and finish with a sprinkle of coconut.

  7. Refrigerate for a min of 3 hours before cutting.
