Mocha Breakfast Pudding

Ingredients (serves 1)

  • 2 GF weetbix, crushed

  • 1 tsp instant coffee

  • 1/2 serve Happy Way vegan chocolate protein powder (discount code: HAPPYELISE)

  • 1 tsp cacao powder

  • Sweetener of choice - I used chocolate stevia drops

  • 1/2 mashed ripe banana

  • 1/3 cup almond milk

  • 1 tsp baking powder

  • Pinch of salt

  • For topping: coconut yoghurt mixed with 1 tsp coconut sugar and 1 tsp cacao

Method

  1. Combine all ingredients (except the topping ingredients, in a bowl and mix well.

  2. Pour into a lined single serve baking pan or muffin mould and bake for 15 minutes on 180 degrees in the airfryer (for oven, bake at 180 degrees fan-forced for 15-20 minutes).
