Chunky Trail Mix Cookies
Ingredients
2 large ripe bananas, mashed
2 eggs or vegan eggs (either works!) 1/3 cup nut butter (I used almond)
1/4 cup Teff Tribe teff seeds
1.5 cups Teff Tribe teff flour
1 tsp baking soda
2 tbsp honey (sub for maple syrup for vegan option)
1/2 tsp ground cinnamon
1/4 cup pepitas
1/4 raisins
1/4 cup walnuts, chopped
1/4 cup chocolate chips
Method
Preheat the oven to 180 degrees celsius, fan-forced.
Start by combining all the wet ingredients in one bowl and the dry in another.
Pour the wet into the dry and then mix well to combine.
Fold through the raisins, pepitas, walnuts and chocolate. Spoon mixture onto a baking tray to make 14 cookies. The mixture will be quite wet so use the back of a spoon or your fingers to gently shape into cookies and top with more choc chips and walnuts.
Bake for 13-15 minutes.
Store in the fridge and enjoy cold, or I like to warm mine in the microwave for a 10-12 seconds before eating! So delicious!
