Red Curry Jackfruit Burgers

Ingredients (serves 5 patties)

  • 1 packet of Plant Life Food Co Red Curry Jackfruit

  • 1 brown onion, diced

  • 1 zucchini, grated with excess water squeezed out

  • 1/3 cup chickpea flour

  • 2 vegan eggs (I used 2 tbsp flaxmeal + 5 tbsp water)

  • 1-2 tsp red curry paste (optional, depending on how spicy you like it!) To serve: slaw, vegan mayo, GF burger buns of choice

Method

  1. Sauté the onion and jackfruit until the onion is translucent.

  2. Add this into a bowl with the remaining ingredients and combine.

  3. To form the patties, spoon 2 tbsp of mixture onto a piece of baking paper and shape with the back of your spoon or damp fingers.

  4. Transfer the baking paper into your airfryer (you may need to do this in batches), spray with a little olive oil and bake at 180 degrees Celsius for 25 minutes, turning half way.

  5. Mix the slaw with vegan mayo.

  6. Assemble your burgers with the jackfruit patties and slaw!
