Single Serve Breakfast Carrot Cake

Ingredients

  • 1/3 cup @tefftribe Teff Flakes

  • 1/2 tsp baking powder

  • 1 serve @happywayau vegan vanilla protein (Discount code: ‘HAPPYELISE’)

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/4 tsp each of ginger and nutmeg

  • 1/2 small carrot, grated

  • 1 tbsp monk fruit or 1/2 tbsp maple syrup

  • 1/2 cup coconut or almond milk

  • 1 tbsp raisins

  • 1 tbsp walnuts, crushed

  • Icing: 2 tbsp @lakantoaustralia sugar free monk fruit icing sugar + a dash of mylk of choice

    Method

    Combine all the dry ingredients, then mix in the wet ingredients. And then mix in the grated carrot, raisins and walnuts. Pour into a greased ramekin and bake in the airfryer for 12 minutes at 180 degrees (or an over for 15-20 minutes). While the cake bakes, whisk together the ingredients for the icing, adding as much mylk as necessary to achieve a thick yet runny icing consistency (you won't need much). Once the cake is cooked, top with icing and ENJOY!
