Choc Peanut Butter Protein Cookies

These are another one-bowl recipe because ain’t nobody got time for cleaning when it’s the weekend and there is fun to be had!

Choc Peanut Butter Protein Cookies

Makes 10 large cookies

Ingredients

  • 1 egg or vegan egg replacer

  • 1/4 cup maple syrup

  • 1 heaped tbsp coconut oil, melted

  • 3 heaped tbsp natural peanut butter

  • 1 tsp vanilla extract

  • 1 cup almond meal

  • 2 serves (60g) VEGAN chocolate protein powder

  • 1/2 tsp baking soda

  • Choc chips, measure with your heart

Method

  1. Preheat the oven to 180C fan-forced and line a baking tray with baking paper.

  2. Add all the wet ingredients to a bowl and combine.

  3. Then add in the dry ingredients a mix until well combined. Fold through the choc chips.

  4. Roll tablespoon size portions of the dough into balls and place on the lined baking tray, flatten with your fingertips. Repeat for remaining dough.

  5. Place in the oven to bake for 10 minutes.

  6. ENJOY! I’m warning you now, these won’t last long!
