Choc Mint Protein Fudge

The recipe you all have been waiting for!! And I totally get it, because who doesn't love some creeeamy, indulgent FUDGE!? Especially when its made from all wholesome ingredients too!

If you make one of my recipes, let it be this one - my bf said its possibly the best thing I have EVER made and I think I agree. Added bonus, it takes next to no time to make - the hard part is waiting for it to set.

Choc Mint Protein Fudge

Ingredients

Makes 8-10 squares

  • 1/2 cup coconut cream (canned)

  • 1 tbsp coconut oil (measured while solid)

  • 1 tbsp almond butter

  • 1 tbsp cacao powder

  • 45g (1.5 scoops) @happywayau Vegan Minty Cacao Protein*

  • 2 tbsp sweetener (stevia granules, coconut sugar etc.)

*if you don't have the Minty Cacao Protein, you can sub for Vegan Chocolate Protein Powder & add mint essence (1/2-1 tsp) at create the choc mint flavour!

Method

  1. Add all the ingredients to a saucepan and place over medium heat.

  2. Stir to combine everything and continue gently mixing until smooth and silky.

  3. Pour into a silicone tray or lined baking tin, smooth over and place in the freezer to set for minimum 5 hours before cutting (I know, this is the hard part!!).

  4. Once set, cut into squares and try not to eat them all at once!

Keep stored in the freezer and eat straight from the freezer!
