Peanut Butter Choc Chip Cookies
Crispy on the outside, soft & chewy on the inside, and it involves peanut butter - so need I say more?
And not to mention they are sugar free - I used stevia for sweeten mine but feel free to use whatever sugar you prefer and of course, they are also gluten free & dairy free!
Peanut Butter Choc Chip Cookies
Serves 9
Ingredients
3/4 cup almond meal
1 tbsp tapioca flour
1 tbsp coconut flour
1/2 tsp baking soda
1/3 cup granulated stevia (or sugar of choice)
Pinch of salt
2 tbsp coconut oil, melted
1 egg
1/2 cup natural peanut butter
1 tsp vanilla extract
Dark Chocolate, chopped (measure with your heart)
Method
Preheat your oven to 180 degrees, fan forced, and line a baking tray with baking paper.
In a large bowl, combine all the dry ingredients. And in a separate bowl combine all the wet ingredients.
Pour the wet into the dry ingredients and stir to combine and form a cookie dough texture.
Fold in chopped chocolate.
Roll mixture into 9 balls and flatten on the lined baking tray.
Place in the oven to bake for 10 minutes or until just golden.
