Chocolate Covered Strawberry Overnight Oats

The breakfast bowl that dreams are made of!

To be honest, I never use to be a fan of strawberry flavour anything until I discovered Nourish and Care Strawberry Almond Milk! This stuff honestly tastes like the Strawberry Nesquik I use to drink as a kid and it is my new favourite thing to use in all my breakfast & smoothie creations! And this recipe below, is going to be on high rotation going forward!

Ingredients (serves 1)

  • 1/2 banana, mashed

  • 1/3 cup oats

  • 1 tbsp chia seeds

  • 1/2 cup Nourish and Care strawberry almond milk (discount code: ELISE15)

  • 1/2 tsp vanilla extract

  • 1 serve Happy Way vegan vanilla protein (discount code: HAPPYELISE)

  • 1 heaped tbsp coconut yoghurt + more for topping

  • 3 large strawberries, roughly mashed

  • 1 tbsp sugar-free chocolate topping (I use Natvia)

Method

  1. To make, simply combine all the ingredients (excluding choc topping) in a bowl and place in the fridge overnight.

  2. In the morning, top with the choc topping, some extra coconut yoghurt and fresh strawberries to serve!
