Choc Almond Crunch Donuts
For the Donuts (makes 9)
1/2 cup almond meal
1 cup Teff flour
2 heaped tbsp cacao powder
1 tsp baking powder
1/3 cup + 1 tbsp vegan butter, melted
1/4 cup oat milk
1/4 cup maple or rice malt syrup
2 eggs or vegan egg replacers
1 tsp vanilla extract
Preheat the oven to 180 degrees, fan-forced.
Combine all the dry ingredients in a mixing bowl and then add in the wet ingredients.
Transfer mixture into 9 greased donut moulds and bake for 12-13 minutes.
Once cooked, set aside to cool before moving onto the icing.
For the icing:
3/4 block @lovingearth Almond Crunch Chocolate
1 tsp coconut oil
1/4 cup almonds, chopped
Melt the chocolate and coconut oil together.
Then dip the donuts into the icing and sprinkle with chopped almonds.
Place in the fridge for 1 hour to set.
