Carrot Cake Donuts

Ingredients

FOR THE DONUTS:

  • 2 cups almond meal

  • 1/2 cup + 1 tbsp tapioca flour

  • 1 large carrot, grated and excess water squeezed out

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 tsp ginger

  • 1 tsp vanilla

  • 2 eggs

  • 1/4 cup coconut oil, melted

  • 1/4 cup pure maple syrup

  • 1/3 cup raisins

  • 1/2 cup walnuts, chopped

FOR THE ICING:

  • 3 tbsp coconut yoghurt

  • 75g dairy free white chocolate, melted

  • Desiccated coconut

Method

  1. Preheat the oven to 180C, fan-forced and grease your donut moulds (or alternatively you can use muffin moulds!)

  2. Combine all the wet ingredients in a bowl, then add in the dry ingredients and mix well.

  3. Fold in the walnuts and raisins.

  4. Spoon mixture into donut moulds and bake for 12-13 minutes.

  5. Allow donuts to cool and move onto icing. Combine the coconut yoghurt and melted white chocolate until smooth.

  6. Have the icing and desiccated coconut in two separate bowls. Dip donuts into icing and then into coconut.

  7. Optional: add a cute like chocolate Easter egg to the top 🐰

  8. Place in the fridge to set and enjoy!
