Hot Cross Baked Oats
Ingredients (serves 1)
1/2 cup oats
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp each of nutmeg and ginger
1 heaped tbsp coconut yoghurt
1/4 cup almond milk
1 tbsp pure maple syrup
1/2 tsp vanilla extract
1 tbsp almond butter (or cashew)
Mix ins: 1 tbsp raisins, 1 tbsp dairy free choc chips
Melted dairy free white choc, for the cross
Method
Preheat the oven to 180C, fan-forced.
Add all the ingredients to a blender, except choc chips and raisins, and blend until smooth.
Fold in raisins and choc chips.
Transfer into a greased ramekin and place in the oven to bake for 18 - 20 minutes.
Once cooked, top with a melted white chocolate cross and dig in!
