Hot Cross Baked Oats

Ingredients (serves 1)

  • 1/2 cup oats

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp each of nutmeg and ginger

  • 1 heaped tbsp coconut yoghurt

  • 1/4 cup almond milk

  • 1 tbsp pure maple syrup

  • 1/2 tsp vanilla extract

  • 1 tbsp almond butter (or cashew)

  • Mix ins: 1 tbsp raisins, 1 tbsp dairy free choc chips

  • Melted dairy free white choc, for the cross

Method

  1. Preheat the oven to 180C, fan-forced.

  2. Add all the ingredients to a blender, except choc chips and raisins, and blend until smooth.

  3. Fold in raisins and choc chips.

  4. Transfer into a greased ramekin and place in the oven to bake for 18 - 20 minutes.

  5. Once cooked, top with a melted white chocolate cross and dig in!
