Breakfast Apple Crumble

The ultimate breakfast because who doesn’t want to eat dessert for breakfast? Especially when it’s got a protein hit and allll the indulgent vibes, yet a totally balanced meal full of wholesome ingredients!

Breakfast Apple Crumble

Serves: 4

Ingredients

For the crumble:

  • 1 cup oats or quick oats

  • 1/4 cup vegan vanilla protein powder

  • 1 tsp ground cinnamon

  • 1 tbsp pure maple syrup

  • 2 heaped tbsp coconut oil

  • 1/2 cup macadamias

For the apple mixture:

  • 3 apples, chopped into cubes (I left the skin on but peel if you prefer)

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1 tbsp pure maple syrup

  • 2 tbsp raisins

Method

  1. Preheat the oven to 180C, fan-forced.

  2. Add all the crumble ingredients to a food processor and pulse a few times to roughly chop but leaving some chunks of macadamias. Set aside.

  3. Add the chopped apples to a small saucepan and add in 75ml water. Place on the stove over low-medium heat and simmer covered until soft (roughly 15 minutes). Stir occasionally.

  4. Once softened, add in the remaining apple mixture ingredients and mix through.

  5. Pour apple mixture into an oven proof baking dish and spread evenly. Pour over crumble and press into an even layer.

  6. Place in the oven to bake for 20-22 minutes, or until lightly golden and crispy.

  7. Serve warm with a dollop of coconut yoghurt.

STORAGE: this recipe is great for meal prep and will last for up to 4 days in the fridge. Simply divide portions into airtight containers and store in the fridge. Reheat for 1-2 minutes before serving.
