Banana Peanut Butter Protein Brownies

Ingredients

  • 2 ripe bananas, mashed

  • 2 eggs

  • ¼ cup coconut sugar

  • ¼ cup natural peanut butter

  • 1 tsp vanilla extract

  • ¾ cup almond meal

  • 1 serve Happy Way vegan chocolate protein powder (discount code: HAPPYELSE)

  • 2.5 tbsp cacao powder

  • Pinch of salt

  • ½ tsp bicarb soda

  • ¼ cup dark chocolate of choice, chopped

Method

  1. Preheat your oven to 180 degrees, fan-forced and line a pan with baking paper.

  2. Beat the eggs and coconut sugar for 2 minutes.

  3. Add remaining wet ingredients into the egg mixture and combine.

  4. Then add in the dry ingredients, excluding the dark chocolate, and mix well to combine.

  5. Fold in the chopped dark chocolate.

  6. Transfer mixture into the lined baking tray and bake for 16-18 minutes, or until cooked through.

  7. Allow to cool in the pan for 30 minutes before transferring onto a wire cooling rack.

  8. Allow to cool completely before cutting.
