Choc Banana Breakfast Parfait

Ingredients

  • 1.5 Weetbix (I used GF Weetbix), crushed

  • 2 tbsp almond milk

  • 2 heaped tbsp coconut yoghurt

  • 1 serve Happy Way Vegan Vanilla protein (discount code: HAPPYELISE)

  • 1 banana

  • 1 tub Go Raw Desserts Choc Mousse

  • Walnuts, to top

Method

  1. Mash half the banana and mix together the coyo, Happy Way Vanilla protein and mashed banana.

  2. Slice the other half of the banana.

  3. Now time time assemble! Layer in half the crushed Weetbix and pour over 1 tbsp almond milk. Then half the yoghurt mixture, and some banana slices. Repeat.

  4. Then top the parfait off with 1 heaped tbsp Choc Mousse (eat remaining mousse as you assemble cos you always need baking snacks) and some crushed walnuts.

  5. Place in the fridge overnight to absorb and set, and in the morning you will have a delicious parfait ready to eat!
