Sweet Potato Protein Muffins
Ingredients
1.25 cup oat flour
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1 serve Happy Way VEGAN vanilla protein (I highly recommend this protein because it tastes like cake batter, use HAPPYELISE for a discount!)
2 flax eggs (or regular eggs)
1 small ripe banana, mashed
1 tbsp monk fruit sweetener (or maple syrup)
2 tbsp cashew butter (or almond)
1 cup mashed sweet potato
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 -2/3 cup almond milk
1/3 cup pecans, roughly chopped
Method
Preheat oven to 180 degrees celsius, fan-forced.
Add all ingredients to a food processor, except pecans, and process until a smooth batter forms.
Mix in the pecans and spoon mixture into 9 muffin moulds.
Bake for 20-25 minutes or until cooked through.
