Loaded Jackfruit Nachos

Ingredients

  • 8 small white potatoes, washed and skin on

  • 1 packet of Plant Life Food Co BBQ Jackfruit

  • Salad: tomato, red onion, carrot and cabbage

  • Avocado, mashed

  • DF Sour Cream (made using 1 heaped tbsp of coconut yoghurt mixed with juice of 1/2 a lime)

  • Shredded DF cheese

Method

  1. Slice your potatoes evenly, spray with some olive oil and bake in the airfryer (o oven) until cooked and crispy. I baked mine in the airfryer at 200 degrees for 20-22 minutes.

  2. Meanwhile, heat the jackfruit in a non-stick pan over medium heat for 6-8 minutes, or until heated through.

  3. Then it is time to assemble! Start with your crispy baked potatoes, BBQ jackfruit, salad, shredded cheese, smashed avo and sour cream!
