Sweet Chilli Mayo Fish Tacos
Holy guacamole, these turned out even better than I could have hoped!! Now I am on holidays, you can bet I am going to take full advantage of my extra time and create some gourmet af lunches!
Today's hero ingredient was definitely the Gevity RX Great Guts Mayo, which is absolutely super charged with vitamins and nutrients! This baby not only contains 1/2 a serve of bone broth in every serve, but it is also rich in prebiotic fibre to feed our healthy gut bacteria AND is egg free!! As someone who is intolerant to eggs, finding a wholesome mayo that isn't full of crap is no easy task. So I also love that Gevity RX uses extra virgin olive oil in this mayo!
I've been adding this Mayo to everything but I think this creation right here is my favourite way to have it so far, get the highly requested recipe below!

Sweet Chilli Mayo Fish Tacos
Ingredients (serves 1)
1 fillet fish of choice (cod, john dory, snapper etc)
2 tbsp shredded coconut
1 tbsp coconut flour
1/2 tbsp tapioca flour
Pinch of salt
1/4 tsp paprika
1/4 cup almond milk
Olive oil spray
To serve:
3 corn tortillas
Salad of choice
1 tbsp Gevity RX Great Guts Mayo
2 tbsp sweet chilli sauce
Lime wedge
Method
Preheat your airfryer (or oven) to 180C.
Cut the fish into 3 strips. Place the coconut, flours, salt and paprika in a bowl and combine. And place the almond milk in a separate bowl.
Dip the fish in almond milk and then coat in the crumb, repeat for all 3 strips.
Spray with olive oil and place in the airfryer to cook for 8-10 minutes (or oven for 12-15 minutes).
Place cooked fish on tortillas, add salad, a dollop of Gevity RX Mayo and sweet chilli sauce.
Serve with fresh lime and enjoy!
