Christmas Blondies

I can't help myself, as soon as I started pumping the Christmas songs yesterday I just got so excited and inspired and had to whip up one last Christmas recipe to share with y'all! And I promise you, this one is a goodie!! Perfect to share with loved ones on Christmas Day!

And I just want to remind you, that enjoying treats like this during the festive period is totally OK! Challenge that controlling voice inside your head, say YES to something you wouldn't usually have and be a little spontaneous! Because when you look back, it is going to be the memories and laughs you shared with loved ones over delicious Christmas food and treats like this that you remember - not the number on the scale or size of your clothes.

Christmas only comes around once every year, this time is precious so cherish it and live in this beautiful moment.

Ingredients (makes 16 squares)

  • 2 large ripe bananas

  • 3 tbsp apple sauce

  • 1 tsp vanilla extract

  • 1/2 cup + 1 tbsp almond milk

  • 2 cups gluten free plain flour

  • 1 cup almond meal

  • 1/3 cup Natvia Living GOLD Brown Sugar alternative - DC: ELISE15 (or sub coconut sugar)

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • Spices: 1 tsp cinnamon, 1 tsp ginger, 1/4 nutmeg

  • 1/4 cup pistachios

  • 1/4 cup pecans, chopped

  • 1/4 cup raisins

Method

  1. Preheat your oven to 160C, fan-forced.

  2. In a large bowl, mash the bananas and then add in the remaining wet ingredients. Mix to combine.

  3. Add in all the dry ingredients and mix well. Fold in the nuts and raisins.

  4. Transfer into a lined square baking tin, top with extra nuts, raisins and chocolate chips (optional) and place in the oven to bake for 25-30 minutes, or until golden and cooked through.

  5. Allow to cool completely before slicing into 16 squares.
