Peanut Tofu Bowl

This bowl turned out so much more yummy than I ever thought and took next to no time to put together!

I always have a source of cooked protein in the fridge so I can easily throw together a balanced meal in no time. Earlier in the week I cooked this Peanut Soy Tofu in the airfryer, so simply heated this up along with the Tilda Wholegrain Basmati Rice packet (which was my source of complex carbs), added in some fresh veggies and lunch was D-O-N-E! 

To make the Peanut Tofu marinate:

  • 1 heaped tbsp peanut butter

  • 2 tbsp GF soy sauce

  • 1 tsp rice wine vinegar

  • 1 tsp sriracha

  • 1/4 tsp ground ginger

  • 1/4 tsp garlic powder

  • 2 tbsp water

Method

  1. Mix together the marinade ingredients and marinate 300g of tofu in this for 30 minutes.

  2. Then cooked marinated tofu in the airfryer at 200 degrees for 24 minutes (or in the oven for 30-35 minutes).
