Peanut Rocky Road

With only 6 ingredients, this is super simple to make and I guarantee it will be a crowd pleaser!

Ingredients

  • 1 cup coconut oil, melted

  • 2/3 cup cacao powder

  • 2 tbsp maple syrup

  • 1 heaped tbsp peanut butter + an extra tbsp for topping

  • 2/3 cup peanuts

  • 1/2 cup coconut flakes

  • Pinch of salt

Method

  1. Add the melted coconut oil, cacao, maple syrup and 1 heaped tbsp of peanut butter to a bowl and stir to combine.

  2. Add in the peanuts and coconut flakes and combine well.

  3. Pour into a lined tray. Swirl through the remaining peanut butter and sprinkle over the salt.

  4. Place in the freezer to set over night (or minimum 3 hours) before cutting.

  5. Keep stored in the freezer for a solid chocolate consistency, or in the fridge for a softer 'fudge' like consistency.

NOTE: you could use block of dark chocolate for this recipe to save making your own. Simply use 2 blocks of dark chocolate in place of the coconut oil, cacao and maple syrup.
