Apple Pie Baked Oats

Who doesn't love a nice, warm slice of apple pie? I've recreated the classic Apple Pie into a healthy, balanced and warming breakfast dish! Packed with a healthy dose of fibre from the oats, one of your two a day servings of fruit, refined sugar-free and will keep you full for hours.

Plus did I mention it’s made using just a handful of staple ingredients you’ll have lying around in your pantry right now?

This is a great recipe to try out for your next MEAL PREP! Simply make on a Sunday, portion out into 3 containers, reheat in the morning & you have a gourmet breakfast ready in just seconds!

Ingredients (serves 3)

  • 1 1/4 cup rolled oats

  • 1 1/4 cup boiling water

  • 2 diced apples

  • 1 mashed banana

  • ½ cup raisins (optional)

  • ¼ cup almond milk

  • 1-2 tbsp maple syrup (depending on how sweet you like it)

  • 2 tsp ground cinnamon

  • 1 tsp vanilla extract or stevia

  • Pinch of salt

  • Hemp seeds, flaked coconut and pepitas, to top (optional)

  • To serve: yoghurt of choice (I like to have coconut yoghurt mixed with protein powder for an additional hit of protein!)

Method

  1. Preheat the oven to 180ºC fan-forced.

  2. Place the oats in a bowl and add boiling water (you have to cover the oats). Let stand for about 10 minutes. Then add the rest of the ingredients.

  3. Mix well and place the oatmeal in a lined baking dish. Sprinkle over hemps seeds, pepitas and flaked coconut (if using).

  4. Bake for 30-35 minutes or until golden brown.
