Microwave Peanut Butter Oat Cake
The easiest and quickest cake you will ever make! Perfect for breakfast or a snack when you feel like something a bit fancy, but just don't have the time!
Microwave Peanut Butter Oat Cake
Serves: You and only you!
Ingredients
1/2 banana, mashed
1/4 cup oat flour
1 scahet/24g powdered peanut butter
1 tbsp flaxmeal
1 tsp baking powder
1/4-1/3 cup almond milk
1/2 tbsp honey (or sub pure maple syrup if vegan)
Pinch of salt
Method
Mix all ingredients together in a small bowl.
Then pour into a large mug (be sure to grease this with olive or coconut oil!).
Place in the microwave and cook for 2-3 minutes on low heat (cook for longer if you prefer a more firm cake texture).
Allow to cook for 5 minutes then dig in! I topped mine with some coconut yoghurt mixed with a little peanut butter! YUM!
