Ingredients

  • 2 cups oat bran or flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • Pinch of Salt

  • 2 ripe bananas, mashed

  • ⅓ cup honey

  • 1 tsp vanilla extract

  • ½ cup natural peanut butter (crunchy or smooth is fine)

  • 3 vegan eggs (or regular eggs)

  • 3 tbsp cacao powder

  • Dash of almond milk

  • 1/2 banana, sliced (for topping)

  • Handful of dark choc chips (for topping)

Method

  1. Preheat your oven to 180 degrees celsius, fan-forced.

  2. Add your mashed banana, honey, vanilla, peanut butter and eggs to a bowl, mix well to combine. In a separate bowl add the oat bran, baking powder, baking soda, cinnamon and salt, and combine.

  3. Pour the wet mixture into the dry mixture and mix well. Scoop out 1/3 of the mixture into a separate bowl and stir through cacao powder, adding a dash of almond milk to help combine.

  4. Line a loaf baking pan and spoon in a layer of the plain mixture. Then spoon over a few dollops of the chocolate mixture and swirl through using a knife. Repeat until you have no mixture remaining.

  5. Top with sliced banana and chocolate chips. Then place in the oven to bake for 45-50 minutes or until a skewer comes out clean.

  6. Allow to cool for a 1 hour before slicing.
