Peanut Butter Choc Swirl Banana Bread
Just when you thought the classic Banana Bread couldn't get any better, I've gone and added what could be the greatest combination of ALL time to it - Peanut Butter and Chocolate! Prepare your taste buds for this epic recipe! You're going to want to add this beauty to your baking list!
Ingredients
2 cups oat bran or flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
Pinch of Salt
2 ripe bananas, mashed
⅓ cup honey
1 tsp vanilla extract
½ cup natural peanut butter (crunchy or smooth is fine)
3 vegan eggs (or regular eggs)
3 tbsp cacao powder
Dash of almond milk
1/2 banana, sliced (for topping)
Handful of dark choc chips (for topping)
Method
Preheat your oven to 180 degrees celsius, fan-forced.
Add your mashed banana, honey, vanilla, peanut butter and eggs to a bowl, mix well to combine. In a separate bowl add the oat bran, baking powder, baking soda, cinnamon and salt, and combine.
Pour the wet mixture into the dry mixture and mix well. Scoop out 1/3 of the mixture into a separate bowl and stir through cacao powder, adding a dash of almond milk to help combine.
Line a loaf baking pan and spoon in a layer of the plain mixture. Then spoon over a few dollops of the chocolate mixture and swirl through using a knife. Repeat until you have no mixture remaining.
Top with sliced banana and chocolate chips. Then place in the oven to bake for 45-50 minutes or until a skewer comes out clean.
Allow to cool for a 1 hour before slicing.
