Lemon Poppy Seed Pudding

Our friends gave us a HUGE bag of the biggest lemons I have ever seen, so I'm basically making lemon flavoured everything right now. But I honestly love baking with lemons because they are so naturally sweet, you don't need to add any extra sweeteners!

Naturally sweetened and perfectly balanced, you can Lemon Poppy Seed Pudding for breakfast or dessert!

Ingredients (serves 1)

  • 1/3 cup oat flour

  • 1 serve Happy Way vegan vanilla protein (Discount code: HAPPYELISE)

  • 1/2 tsp poppy seeds

  • 1/2 tsp baking powder

  • Pinch of salt

  • 1/2 tsp vanilla extract

  • 1 tbsp coconut yoghurt

  • 1/4 cup almond or coconut milk

  • Juice and zest of half a lemon

Method

  1. Combine all dry ingredients and then mix through the wet ingredients.

  2. Transfer into a greased ramekin and place in the airfryer to bake for 14 minutes at 180C (or bake in an oven at 180C for 25 minutes).
