Jumbo Airfryer Cookie

Because seriously who doesn't want a cookie the size of their head that is nutritious enough to eat for breakfast?

Made from the goodness of oats, some protein powder and nut butter to make it a balanced meal you can enjoy at any time of the day - even breakfast! I've also used Monk Fruit Sweetener in this recipe as it is a low glycemic (GI) sweetener that tastes and acts just like sugar! So you get the sweetness without the blood sugar spike.

Ingredients

Serves 1

  • 1/4 cup oat flour

  • 1/4 cup rolled oats

  • 1 tbsp vegan vanilla protein

  • 1/2 tsp baking powder

  • Pinch of salt

  • 1 tbsp peanut butter (or any nut butter)

  • 2 tbsp monk fruit sweetener

  • 1/2 tsp vanilla extract

  • 4-5 tbsp almond milk

  • Dairy free dark chocolate chips, raisins, seeds, chopped nuts

Method

  1. Combine all ingredients in a bowl - adding almond milk gradually until you get a cookie dough texture that holds firmly together when pressed.

  2. Add in any mix ins like chopped nuts, seeds, raisins and/or chocolate.

  3. Mould into a ball and flatten onto a piece of baking paper or foil.

  4. Place in the airfryer to bake at 180C for 8 minutes (you can also cook this in an oven, it will just need a bit longer cook time).
