Healthy Teriyaki Fried Rice

Here's a super simple, throw together lunch recipe for you! This was the perfect lunch for a day like today when I've run out of meal prepped meals and just need to make something quick and easy on my work break.

Ingredients (serves 2)

  • 1 packet Tilda wholegrain brown basmati rice (or 250g of cooked rice!)

  • 250g tofu, scrambled (made by mashing tofu with a fork), or you could sub this for 3 eggs

  • 2 cups frozen mixed vegetables

  • 2 large handfuls of baby spinach

  • 2 tsp sesame oil

  • Teriyaki sauce: combine the following in a jar and shake well - 1 minced clove of garlic, 1/2 tsp ground ginger, 2 tbsp tamari or coconut aminos, 1 tsp rice vinegar, 1 tbsp corn starch, pepper

Method

  1. Microwave the rice as per packet instructions.

  2. Then, heat a fry pan over high heat and add in sesame oil. Add in the frozen veg to defrost and cook.

  3. Once cooked add in the tofu scramble, mix through and cook for 2-3 minutes.

  4. Pour in the rice, baby spinach and teriyaki sauce, stir everything together and cook until spinach has wilted. Then serve!
