Gooey Low Sugar Caramel Slice
A caramel slice that is a gooey & indulgent as the real thing, that you would never know that it is also gluten free, dairy free, vegan AND low sugar!
As a kid, my grandma would always have a big slab of caramel slice at her house whenever I went there & ever since, it has alwaaaays been my weakness! As I've mentioned, I've had to make some dramatic dietary changes recently to prevent my thyroid issues worsening, including pretty much cutting out all sugar. So I'm continuing to adapt & making new versions of my favourite treats that are just as indulgent, but still support my health goals!
I hope you enjoy this one as much as I did!! The whole batch may have been eaten within 24 hours..
GOOEY LOW SUGAR CARAMEL SLICE
Serves 8
Base layer
1 cup of mixed nuts - I used walnuts & almonds
1/4 cup desiccated coconut
3 tbsp coconut oil
Pinch of salt
Add all the base ingredients to a high power blender (I use the Froothie Optimum 9400 and you can use the code ELISE20 for money off!). Blend until a crumb batter forms that hold together then pressed.
Press into a lined baking pan & place in the oven to bake at 180 for 15 mins.
Allow to cool slightly & move onto the next layer.
Caramel filling
1/3 cup coconut milk (canned)
1/4 cup smooth peanut butter
1/4 cup tahini
1-2 tbsp pure maple syrup (depending how sweet you like it, taste as you go)
1 scoop @beforeyouspeakcoffee caramel creamer (optional, add 1 tbsp extra maple if omitting)
1 tsp vanilla extract
Pinch of salt
Add all the ingredients to a bowl and mix until smooth.
Pour over the slightly cooled base and smooth over. Then move onto the chocolate topping.
Chocolate topping
100g dairy free dark chocolate, melted (I use 90% to keep it lower sugar)
Pour over the caramel layer. Gently smooth over & place in freezer for min 4 hours to set before cutting.
*Store in the fridge for a softer, gooey caramel slice or store in the freezer & allow to defrost for a few mins prior to eating.
