Coconut Apple Crisp
I whipped this up earlier in the week because I knew I'd be wanting a ready made breakfast to make my life that bit easier this week and it did not disappoint! It honestly tastes like dessert for breakfast!
Its basically an apple crumble but I challenged myself to make a SUPER dietary friendly version that can be enjoyed by everyone, as well as myself!
This beauty is gluten free, dairy free, vegan, nut free, grain free and refined sugar free! Yet it tastes so decadent!
Serves 3-4
Ingredients
4 apples, chopped (skin on, or peel if you prefer)
Handful of raisins
Juice of 1/2 a lemon
1 tbsp pure maple syrup
1/2 cup shredded coconut
1/3 cup coconut flour
2 sachets @happywayau unflavoured beauty dust (optional, DC: HAPPYELISE)
3/4 tsp ground cinnamon
1/4 cup coconut oil, softened
1/4 cup coconut butter, softened (could sub for more coconut oil)
Method
Preheat oven to 160C, fan-forced.
Add the chopped apples and raisins to a baking tray. Pour over the lemon juice and maple syrup. Set aside.
In a small bowl, combine the shredded coconut, coconut flour, beauty dust (if using) and cinnamon. Then stir through the coconut oil and butter to form a crumbly mixture.
Pour mixture over the apple mixture and distribute evenly. Sprinkle with a little extra cinnamon and place in the oven to bake for 35-40 minutes, or until golden.
