Choc Chip Protein Cookies

I made these cookies on Sunday and half the batch was already gone by Monday. Trust me when I say you NEED these cookies in your life!

They're are another super easy, one-bowl recipe. I bet you even have all the ingredients in your pantry right now, so what are you waiting for?! SAVE this post and get cooking!!

Ingredients (makes 14 cookies)

  • 1 cup gluten free flour

  • 1.25 cup oat flour

  • 2 serves VEGAN vanilla protein powder

  • 2 tbsp coconut flour

  • 3 tbsp granulated sugar of choice (I suggest coconut sugar or granulated stevia)

  • 1 tsp baking powder

  • Pinch of salt

  • 2 eggs

  • 1/3 cup coconut oil, melted

  • 1/4 cup almond milk

  • 25g dark chocolate, chopped

Method

  1. Preheat the oven to 180C fan-forced.

  2. Place all the dry ingredients into a bowl and combine. The mix in the wet ingredients. If mixture is too dry and crumbly, add extra almond milk to reach cookie dough consistency.

  3. Fold in the chocolate.

  4. Shape 1 heaped tbsp of mixture into a ball, place on a lined baking tray and flatten. Repeat for remaining dough.

  5. Place in the oven to bake for 10 minutes.

  6. ENJOY!
