Chicken Burger Bowl
The perfect meal prep or easy lunch/dinner meal! I love food but I hate when meals take foreverrr to cook. I want my food & I don't want to wait hours for it. Which is why I love creating simple, easy & quick recipes like this one!
This recipe came from a craving I was having last week for a Grill'd Chicken Burger & sweet potato fries, so in the meantime before I get to Grill'd, I thought I'd make a 'meal-prep friendly' variation! Its the perfect summer meal prep, full of fresh salad, good quality protein & complex carbs in the form of chips! What more could you want for lunch?!
Ingredients
Serves: 4
Chicken Burgers:
500g chicken mince
1 large zucchini, grated & excess water squeezed out
1/2 large carrot, grated & excess water squeezed out
1 tsp dried Italian herbs (or any herbs/spices of choice)
Salt & pepper, to taste
*for extra flavour you can include a minced clove of garlic & 1/2 sautéed onion, I just omitted this due to food sensitivities.
Sweet Potato Fries:
1 large sweet potato (or 2 medium)
1/2 tsp paprika
Salt & pepper, to taste
Salad:
Lettuce
Tomato

Method
Preheat oven to 180C, fan-forced & line a tray with baking paper.
Mix together all burger ingredients. Form into 8 patties & place on the tray. Spray with olive oil & bake for 15 mins. After 15 mins, flip & cook for another 10-12 mins (or until cooked through). Set aside.
Move onto the fries. Preheat your airfryer (or oven) to 180C. Wash the sweet potato & cut into fries. Place in the airfryer, spray with olive oil & sprinkle over seasonings. Bake for 20-25 mins & give the basket a shake half way through. If using an oven, bake for 30 mins or until crispy (turning half way through).
Cut salad ingredients & then its time to assemble! In a bowl place your salad, 2 burger patties, some fries & a dollop of Gevity Rx sriracha mayo!
